We had exactly one day in Seattle before boarding MSC Poesia for Alaska and we packed in everything we could. Pike Place Market was crowded and absolutely worth it, we found Ghost Alley Espresso, touched the gum wall, discovered the waterfall garden, explored the Seattle Public Library, and made it to the Space Needle before the day was done. We also tried halibut fish and chips and something that was being sold as poutine — one of those was a hit and one of them was not exactly what we expected. Our hotel was adequate but the location left a lot to be desired unless you are specifically there for the Space Needle.
